Eggplant is a vegetable most people are not fond of. I for one ‘always’ skipped the eggplant aisle on the online grocery store. But as I grew up and started to explore different recipes on my own, eggplant became one of my favorites!

Grilled eggplant

This one’s super easy and is the best recipe if you want to grab a quick bite. If you are on a diet you can easily incorporate it in your daily meals and make a fresh couscous salad.

Prepare:

The first step is to know how to buy the right type of eggplant. Even this is an art! So look for nice shiny eggplants that are firm to touch.

Slice the eggplant into round slices, about ¼ inch in thickness. Brush a little olive oil on each slice and season with salt.

Grill:

Preheat the grill on medium-high. Make sure to set the grill, at a level where the heat is provided on the upper and lower side both. Add in the eggplant slices in the grill and let them cook for 3 minutes max. Make sure they don’t get overcooked; that spoils the entire taste. To check if it’s cooked completely, pierce a knife through. It should not be spongy or tough.

How to serve:

It can be served as a hearty salad to make for a refreshing meal. Add some fresh parsley, pluck out some mint leaves from your garden and to give it that crispy touch sprinkle on some chopped almonds. Top it with some yummy French dressing available at any online grocery store and don’t forget to add some olive oil.

You can eat the salad as it is or spread it on some grilled brown toast and eat it asa full meal.

Eggplant parmesan

Ingredients:

1 Cup of shredded mozzarella cheese

1 Cup of shredded parmesan cheese

1 Cup of marinara sauce

First cut the eggplant in round slices and season it with some salt to get rid of the bitter taste. Wash it and pat dry.

Breading:

Next comes the breading of the eggplant. Toast a few bread pieces and crush them up in a grinder. Whisk two eggs in a bowl. Add some herbs, parmesan and two tbsp. of almond milk to the mixture. Dip each slice of eggplant into the mixture, making sure to coat both sides.

Prepare the grill dishes by covering each with a baking sheet. Place the eggplants on it. Bake at 450 degrees until golden brown. Brush up some olive oil on the eggplants for the traditional impact.

Layering

Take a large casserole dish,spread the eggplant and add some marinara sauce to it. Add some shredded parmesan and mozzarella cheese. Repeat the layering and top it off with parmesan cheese.

Baba ganoush

This is a yummy dip prepared with eggplant and once you taste it you won’t be able to stop yourself. It is mostly served with fresh pita bread and fresh baked veggies.

Ingredients:

2 egg plant

2 tbsp. Olive oil

3 tbsp. Lemon juice

2 cloves Garlic

½ teaspoon Salt

½ tsp. paprika

¼ cup Yogurt

Parsley for garnish

Cooking the eggplant

This is the tricky part! Grill the eggplant on the stove directly. Once it’s charred all over and soft from the inside, remove the skin and mash it. Take a bowl and beat some yogurt withinit. Add this to the mashed eggplant flesh. Mix in some salt, lemon juice and paprika. Garnish with parsley.

Ratatouille

Ingredients:

1 egg plant

1 onion

3 tbsp. tomato paste

2 cloves garlic

2 bell peppers

1 ½ ripe tomatoes

Parsley for garnish

Salt to taste

1 tsp. Black pepper

¼ cup olive oil

Method

In a medium saucepan, heat some olive oil. Add the garlic and cook till it becomes pink. Add bell pepper, onion and salt and pepper and cook for ten minutes. Add the eggplant and zucchini, stir and close the lid. After 15 minutes when the veggies become soft add the tomato paste. Cover the lid again and wait to check on the thickened consistency. Spoon out in the dish and drizzle the parsley to serve.
